At the French Quarter's Stella!, Daniel is welcomed by Chef/Owner Scott Boswell and treated to his unique blend of international flavors and Louisiana tradition. The chefs take a short Segway trip over to the Ursuline Convent, where Chef Boswell oversees the extensive garden and uses its harvest for fresh, local ingredients. Back in the kitchen, Chef Boulud prepares an elaborate main course, roasted New York State venison, crusted with a blend of grains, seeds, sage and bacon. Before the guests arrive, Chef Boswell visits a New Orleans institution, the P & J Oyster Co., where each worker shucks approximately 3000 oysters a day. Over dinner, the guests discuss the trend of small tasting menus versus the pleasures of working through one single plate.
